Pumpkin Pecan Muffins

These delicious Pumpkin Pecan Muffins have a simple but tasty Cinnamon Sugar topping! 

INGREDIENTS

1 ¾ cups All Purpose Flour
1 teaspoon Baking Powder
½ teaspoon Baking Soda
½ teaspoon Sea Salt
1 cup Granulated Sugar
½ cup Brown Sugar
½ cup Chopped Pecans 
½ teaspoon Pumpkin Pie Spice
1 ½ teaspoon Cinnamon
2 Large Eggs
1 teaspoon Vanilla Extract
1 cup of Canned Pumpkin 
½ cup Vegetable Oil

Topping:

½ cup Pecan Meal
1 teaspoon Cinnamon
¼ cup Granulated Sugar


INSTRUCTIONS

  1. Preheat Oven to 350 degrees Fahrenheit and line muffin cups with paper liners.
  2. In a large bowl mix all dry ingredients and in another bowl mix all of the wet ingredients. 
  3. Combine the dry and wet mixtures and mix well with a wooden spoon.
  4. Use a large spoon to fill each muffin cup completely full. 
  5. Prepare the topping by mixing the cinnamon, sugar and Pecan Meal in a bowl then sprinkle on top. 
  6. Bake the muffins for 25-35 minutes or until a toothpick comes out clean.
  7. Let cool and enjoy! Add confectionary sugar on top if desired!
