2 medium overripe bananas (about 1.5 cups when mashed)
⅓ cup smooth peanut butter
2–3 tbsp pure maple syrup (adjust to taste)
1¼ cups old-fashioned rolled oats
½ tsp ground cinnamon
¼ cup chopped pecans (plus extra to sprinkle on top)
Instructions:
- Preheat the oven to 350°F (180°C).
- In a medium bowl, mash the bananas until smooth.
- Add in the peanut butter and maple syrup and stir until well combined.
- Mix in the oats and cinnamon. Fold in the chopped pecans.
