Banana Peanut Butter Pecan Bars

2 medium overripe bananas (about 1.5 cups when mashed)
⅓ cup smooth peanut butter
2–3 tbsp pure maple syrup (adjust to taste)
1¼ cups old-fashioned rolled oats
½ tsp ground cinnamon
¼ cup chopped pecans (plus extra to sprinkle on top)

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. In a medium bowl, mash the bananas until smooth.
  3. Add in the peanut butter and maple syrup and stir until well combined.
  4. Mix in the oats and cinnamon. Fold in the chopped pecans.
  5. Line a loaf pan with parchment paper and press the mixture firmly into the pan. Use a spatula to smooth the top. Sprinkle extra pecans on top if desired.
  6. Bake for 25 minutes, or until the edges are golden brown.
  7. Let the bars cool completely before slicing.
